mmmm that looks so nice!! I've smoked in an electric mini-fridge-style smoker, and also with smoke-packs on my regular gas grill.
Is there some kind of chip-delivery system in that? Some have an automated auger which pushes pelletized hardwood into the fire..
Also I dunno if you do any cold-smoking (like for Lox), but that produces some really great results as well (smoked cheese and jerky). I'd wager on your unit there the smoke isn't too hot by the time it's gone through the grill portion to the smoke chamber..
Take some pics of what comes out of it! Some pulled pork or something..  |

It's actually a dutch design from 'witkamp' and it's called the 'oklahoma joe chuck wagon' the 'tubes' are 13" and it's made of 5,5 mm (somewhere between 3/16 and 1/4 inch) steel.
It's not automatic, so I have to do it all by experimenting and it is designed for cold smoking, but as I said it all about trying.
I will load up some pics of the meat I'm going to smoke 
Right now I'm burning it in.

if you can find any mesquite wood..cook with that..you will never cook with anything again ever..good to cook with for anything |

I've read about mesquite, but I've no idea were to find it here, maybe it's called different in Europe, or can you only find it in Texas ?

First experiment:
Two slabs of baby back ribs after 2 hours of smoking

After this I poured some apple juice over them and put them in aluminum foil and let 'm cook for another hour.
I used no sauce this time, just to find out how they taste this way. Next time I'll do the sauce part.

im sure you can find it elsewhere, but there is a shitload of it here (Texas) im in Texas...deep south Texas there is a lot..as well as sporadically spread all over the state
yep yuo will NEVER cook with anyother wood again after you try Mesquite..just my opinion, but i have never tasted anything else that was cooked with other woods that is better than Mesquite |

Hmmmm, only mesquite I can find here are chips for 8 euros per kilo, expensive but maybe worth trying.

I've smoked a little with the Jack Daniels chips - made from old JD casks - the bag smells like a bottle of whiskey, and it really imparts a unique flavour to whatever you're smoking.
Mesquite is a really unique flavour.. definitely worth a try.
