In the manual for the DD-7, it says that if you plug one input into the pedal and use the two outputs, it will ping pong. However, I don't see anything indicating if the DD-7 will still ping pong while utilizing both inputs.

That's going to be a deciding factor as to whether or not I get one. Anyone know the answer? Does the DD-7 still ping pong delay when both inputs and outputs are used?

If so, I'm thinking of this chain...

DC-2 -> PN-2 -> DD-7 (or DD-7 into the PN-2)

As luck would have it, I have a DD-7.

I tried this: input to CE-5, stereo outputs into DD-7, stereo inputs into RV-5, stereo out in to two Valve Junior heads. The DD-7 does NOT ping pong when cables are plugged into both inputs. It only ping pongs when plugged only into the A (mono) input.

In which case you need an all-conquering DD20.

Yup, and I have one. I was just trying to save some board real estate. :)

I know what you mean.

Boss just don't do a delay that comes anywhere near to the features of the DD20.

Granted I have not used a DD-20, but when it comes to stompboxes I reckon the "all-conquering" delay would have to be the Eventide TimeFactor... It does everything and then some (very well)... although I do find it a little hard to quickly dial a new sound in due to it's complicated interface (I usually use my TC Nova Delay if I need something quickly - it's so user friendly!).
